Grown on sandy but fresh, calcareous soil, the Passerina grape produces a fresh flavoured white with distinctive fruit and floral notes: peach, apricot, grapefruit and lime tree. Minerally with floral notes. Ideal with all types of seafood, and soft and pulled curd cheeses. Area and Location of vineyards: Tollo, Ortona. Soft pressing, cold maceration of crushed grapes to 5/8Ā°C. Refinement: four months on the lees in cement tanks
